Spirulina coconut cookies

Christmas make everyone more gluttonous this is true…but aren’t you bored about all this Christmas cookies like gingerbread man, cinnamon orange, or other kinds of cookies?

Anyway during these beautiful days we cannot have biscuits , for specials breakfasts, afternoon snacks or for make little gifts to our friends… The important thing is that they need to be easy and quick to do!

Left only few times before this beautiful days, kitchens are getting hot, Christmas s menu are almost written, the shopping list are longer than the letters of our (or future) little kids for Santa Claus, the gifts are wrapped… What is missing?

These quick and healthy green cookies!

Ingredients for about 20-24 cookies

  • 3/4 cup all purpose flour (100g)
  • 2 cup coconut shred (150g)
  • 1/3 cup brown sugar (75g)
  • 1/3 cup light oil (75g)*
  • 1/4 cup really cold water (60g)*
  • 1 tsp baking powder (4g)
  • 1 tbsp spirulina (4g)

*you can put oil in the fridge for 1 h and water all the night

For the cacao drizzle

  • 5 tbsp icing sugar (40g)
  • 1 tbsp cacao powder (8g)
  • 1 tbsp water (15g)

Process

  1. Blend shredded coconut with a blender fore reduce it in flour,
  2. Transfer in a bowl, add baking powder and flour.
  3. Now add sugar, spirulina, oil and water in a blender and blend until emulsified and creamy.
  4. Pour wet on dry ingredients and mix until nice.
  5. Gently roll the dough between 2 foil of parchment paper.
  6. Using a cutter cut the cookies and transfer on a baking tray.
  7. When all the cookies are ready bake them at 160°C for 15-18 minutes or until done.
  8. In the same time prepare the cacao drizzle mixing all the ingredients in a bowl until smooth creamy but dense.
  9. Drizzle the cookies and let it rest until dried.
  10. Prepare some tea and enjoy!
